These grilled tofu wraps are easy to make in advance and are perfect for on-the-go lunches. Packed with fresh vegetables and a flavorful peanut sauce, they can be stored in cling wrap or a container in the fridge throughout the week.
Strain the water from your tofu packaging and roll the blocks up in a couple small dish towels. Allow to dry for 15 minutes.
Quarter each tofu block lengthwise and score across the top in 1/2 inch slices.
Add olive oil, salt, and pepper, then grill tofu in a cast iron pan until all sides are golden brown, about 2 mins per side.
Combine all sauce ingredients in a small bowl and whisk together until well combined.
Use a steam basket or small steaming tray to steam flour tortillas.
Add peanut sauce, 2 grilled tofu pieces, carrot, cucumber, green onion, red cabbage, and cilantro to the steamed tortilla.
Finish with another drizzle of peanut sauce and roll into a wrap. Enjoy!
