A plant-based version of the classic Big Mac, using vegan patties, cheese, and a special vegan sauce, served with traditional toppings on sesame seed buns.
1. In a small mixing bowl, combine the vegan mayo, ketchup, mustard, pickle juice, paprika, garlic and onion powder, and a few pinches of salt. Whisk together and set aside.
2. Prep the onion by finely dicing it and gather the remaining ingredients.
3. Season both sides of each burger patty with salt and pepper.
4. Heat a cast iron pan over medium to medium-high heat for 2-3 minutes.
5. Add 2 tablespoons of neutral cooking oil to the pan and allow to warm for 20 seconds.
6. Lay the patties down in the pan and sear for 3 to 5 minutes.
7. Flip to the other side, add vegan cheese slices on top of each patty, then cover the pan with a lid and sear for another 3 minutes.
8. Remove the patties and serve on the buns with shredded lettuce, pickle slices, diced onion, and vegan cheese.
9. To create a 3-tiered Big Mac bun, take a few burger bun tops and slice the very top edge off with a knife to create the middle bun.
