30 mins prepServes 4
These burgers are easy to prepare and great for any occasion, featuring a combination of black beans and cremini mushrooms. The patties are seasoned with spices and served with a homemade chipotle mayo, avocado, tomato, jalapeño, and cilantro.
1: Add olive oil, mushrooms, cumin, smoked paprika, chili powder, salt, and pepper to a skillet on medium-high. Cook for 5-6 minutes.
2: Add green onion and cook for 1 minute.
3: Add garlic and stir for 30 seconds. Remove from the pan and add to a food processor with black beans, nutritional yeast, and lime juice. Pulse until well combined.
4: Incorporate bread pieces and pulse again until well-combined. Mix in minced pecans and refrigerate.
5: For the mayo, blend garlic, lemon juice, dijon mustard, salt, pepper, and aquafaba. Blend on high for 15 seconds, then reduce speed and slowly drizzle in oil over 4-5 minutes until emulsified.
6: Stir in diced chipotles, maple syrup, and lime juice into the mayo.
7: Form 4 equally-sized patties. Heat the same skillet over medium-high and add oil. Season patties with salt and black pepper and sear each side for 3-4 minutes.
8: Layer the chipotle mayo on the bottom, add a patty, then more mayo, tomato, avocado, jalapeño, and cilantro. Finish with more mayo and add the top bun. Enjoy!
