BBQ Jackfruit Sandwich

1: Add pickle ingredients to a mason jar and mix together, then set in the fridge for at least 2 hours.

2: Add cabbage ingredients to a bowl and mix until well-combined.

3: Mix chipotle mayo ingredients together in a small bowl.

4: In a Dutch oven over medium-high heat, add 3-4 tbsp of olive oil.

5: Sauté yellow onions with cumin, chili powder, and smoked paprika for 5 minutes.

6: Remove from bowl, add a bit more oil, then add jackfruit to the pot.

7: Sauté for 2 minutes while stirring frequently.

8: Add the cooked onion mixture back in with the remaining BBQ ingredients and stir until well-combined.

9: Bring to a boil, then reduce to a simmer, place a lid over the pot and cook over low heat for 4-6 hours.

10: Add ingredients to a burger bun and enjoy.
