1000-Layer Sweet Potatoes

1: Preheat oven to 350°F.

2: Add one layer of sliced sweet potatoes to a square oven-safe baking dish lined with parchment.

3: Brush the top with melted vegan butter and season with a pinch of salt.

4: Add the next layer of potato slices on top, then repeat until all potatoes are in the dish.

5: Bake for 20 minutes.

6: Take out, allow to cool, then refrigerate for at least 3-4 hours.

7: In a blender, add cashews, 2 tbsp vegan butter, nutritional yeast, 1/2 tsp salt, and water, then blend until creamy.

8: Take potatoes out and cut into smaller rectangles.

9: Add 2 inches of high smoke-point oil to a large Dutch oven and heat until the oil reaches 350°F.

10: Fry potato pieces until golden brown.

11: Serve with cashew cream and fresh rosemary.
